Base#

  • Gluten based Flour or Gluten
    • Gluten imploves the strength of the matrix that contains the air bubbles for a fluffy texture and prevents crepes from breaking
  • Oat/Rice Flour
  • Garbanzo/Chickpeas Flour
  • Flax Meal
  • Baking Soda/Powder
  • Nut/Seed butter
  • Plant-Based Milk or Water
  • Lemon/orange juice and zest
    • For flavour, to create butter milk and creates air pockets with baking soda
  • Buttermilk or Aquafaba
    • Plant based milk and acid (lemon, apple cider vinegar). Works best with high protein milks like soy milk
  • Corn/Potato/Cassava starch
  • Sweetener
    • Apple Sauce
    • Mashed Banana
    • Date/Plum/Maple Syrup or blended/processed after soaking dried fruits in hot water
  • Flavorings and Spices
    • Cacao/Cocoa
    • Pumpkin Spice (Cinnamon, Ginger, Nutmeg, Cloves, Allspice/Sweet Pepper)
    • Vanilla/Coconut/Cinnamon extract

Pancakes#

  • Use Buttermilk/Aquafaba
  • Use plenty of Baking Soda/Powder
  • Use corn/potato/cassava starch
  • Leave hydrated and aerate
  • Very low heat

Waffles#

  • Plenty of Nut/Seed butter
  • Buttermilk/Aquafaba and Baking Soda/Powder are nice, but not necessary
  • Medium to high heat
  • In general they are my favourity since it's quick and I love the toasted crust. They are also great for freezing, take them out to the waffle maker, sandwich grill or pan for reheating
  • Eat them with sweet or savory meals, like a bread

Crepes#

  • More water/liquid
  • Use corn/potato/cassava starch
  • Leave to hydrate
  • Medium heat
  • Storage in silicone bags or wrapped in containers

Instructions#

  • If using Buttermilk, mix the milk with an acid and stir. Leave to coagulate for 5-10 minutes
  • Mix all liquid ingredients and spices in a bowl, blender or food processor. The main liquid can be added after this step
    • When using syrups, mashed bananas or applesauce, a blender or food processor is not necessary
    • When using dried fruits such as dates and plums, soak them in hot water for 5 minutes and blend
    • For whole bananas and apples, you may add them to the food processor or blender as well
  • Mix all solid ingredients and stir for an even distribution
  • Pour the liquid ingredients into the solid ingredients, or add the solid ingredients to the blender.
    • Add the remaining or extra liquid (water or milk/buttermilk) to obtain the desired texture
  • If using Aquafaba, mix with a powered hand mixer or blender and add to the bowl with the batter
  • Optionally leave to hydrate for some minutes outside, or in the fridge if you are leaving it for more than an hour. Very important for fluffy pancakes and string crepes.
  • Heat cooking surface, add oil if necessary
  • Wait for the surface to heat and pour the batter
  • Store in silicone bags or glass/metal containers, great for freezing
  • When heating use the same tool you used for cooking, a waffle maker or pan, or a sandwich grill.
    • When heating in a microwave, add some water to prevent excessive loss of moisture
