Buttermilk/Aquafaba and Baking Soda/Powder are nice, but not necessary
Medium to high heat
In general they are my favourity since it's quick and I love the toasted crust. They are also great for freezing, take them out to the waffle maker, sandwich grill or pan for reheating
If using Buttermilk, mix the milk with an acid and stir. Leave to coagulate for 5-10 minutes
Mix all liquid ingredients and spices in a bowl, blender or food processor. The main liquid can be added after this step
When using syrups, mashed bananas or applesauce, a blender or food processor is not necessary
When using dried fruits such as dates and plums, soak them in hot water for 5 minutes and blend
For whole bananas and apples, you may add them to the food processor or blender as well
Mix all solid ingredients and stir for an even distribution
Pour the liquid ingredients into the solid ingredients, or add the solid ingredients to the blender.
Add the remaining or extra liquid (water or milk/buttermilk) to obtain the desired texture
If using Aquafaba, mix with a powered hand mixer or blender and add to the bowl with the batter
Optionally leave to hydrate for some minutes outside, or in the fridge if you are leaving it for more than an hour. Very important for fluffy pancakes and string crepes.
Heat cooking surface, add oil if necessary
Wait for the surface to heat and pour the batter
Store in silicone bags or glass/metal containers, great for freezing
When heating use the same tool you used for cooking, a waffle maker or pan, or a sandwich grill.
When heating in a microwave, add some water to prevent excessive loss of moisture
